La campilobacteriosis es la primera causa de gastroenteritis de origen bacteriano.
El consumo de aves, está considerado como la mayor ruta de infección. Por ello, esta tesis
tiene como objetivo el estudio de Campylobacter spp. a lo largo de la cadena alimentaria
de la carne de pollo, desde la granja hasta el consumidor. Los resultados han mostrado
altas prevalencias; 42,9 % (otoño) y 30,8 % (primavera) en granjas, 48,2 % en matadero
y 39,4 % en supermercados, siendo C. jejuni la especie mayoritaria. Mediante
electroforesis en campo pulsado, se mostró una gran variabilidad genética entre los
diferentes aislados, siendo dos poblaciones (ST 607 CC y ST 21 CC) capaces de
sobrevivir en matadero durante 21 y 17 días respectivamente. La formación de biofilms,
presencia de genes de virulencia y resistencia a antimicrobianos pueden estar implicados
en dicha persistencia. Se ha mostrado la existencia de un nexo epidemiológico entre estas
cepas y las aisladas en pacientes. Por último, C. coli fue considerada como multiresistente
frente a los antibióticos testados.
Campylobacteriosis is the first cause of gastroenteritis of bacterial origin. The
consumption of poultry is considered as the greatest route of infection. Therefore, the
aims of this thesis was to study Campylobacter spp. along the chicken food chain, from
the ´farm to fork`. The results have shown high prevalence; 42.9% (autumn) and 30.8%
(spring) in farms, 48.2% in slaughterhouse and 39.4% in supermarkets, C. jejuni was the
majority specie isolated. By pulsed field electrophoresis, a high genetic variability was
shown among the different isolates, being two populations (ST 607 CC and ST 21 CC)
able to survive in slaughterhouse for 21 and 17 days respectively. The formation of
biofilms, presence of virulence genes and resistance to antimicrobials may be involved in
such persistence. The existence of an epidemiological link between these strains and those
isolated in patients has been shown. Finally, C. coli was considered as multi-resistant
against the antibiotics tested.
