Study of non-thermal technologies to preserve the quality of fresh foods

La preocupación por consumir productos más saludables, con aspecto natural y mínimamente procesados ha aumentado notablemente. Con el fin de asegurar la seguridad de un alimento, la técnica habitual es el tratamiento térmico, pero esto conlleva una pérdida de nutrientes y de calidad. Es necesario buscar tecnologías alternativas que consigan la inactivación enzimática manteniendo la calidad del producto. La principal tecnología estudiada es el dióxido de carbono presurizado (HPCD), que emplea CO2 a alta presión a temperaturas moderadas, lo que evita la pérdida de nutrientes. El principal alimento estudiado es zumo de manzana no clarificado, pero esta tecnología también se ha aplicado en otros alimentos para comparar su efecto. La tecnología HPCD se ha comparado con la termosonicación, el plasma frío o las altas presiones hidrostáticas. También se ha estudiado el efecto de estos tratamientos en propiedades de calidad del alimento y su evolución a lo largo del tiempo.

The awareness of consuming healthy, fresh-like and minimally processed products has notably increased. Food Industry usually employs thermal treatments to assure food safety, but it can produce the loss of quality and nutritional properties. Finding alternative non thermal technologies to achieve enzymatic inactivation while maintaining the quality of the food is of great interest. The main studied technology is High Pressure Carbon Dioxide (HPCD), which employs pressurized CO2 at mild temperatures, avoiding the loss of thermolabile compounds. Cloudy apple juice is the main studied product, but this technology has been also applied on other food products to compare its effect. HPCD technology has been compared with thermosonication, cold plasma or high pressure processing. The effect of these treatments over quality properties and their changes during storage has also been studied.
